Late Harvest Zinfandel Brownies

Since our last encounter, I (Sara) have started working in the wine industry. This causes a distraction from my normal cooking rutine but it also lends to more creative recipes when inspiration or suggestions come. My wonderful roommate who also works at a winery learned of this recipe from a coworker. I substituted their late harvest Zinfandel for my own (Fritz Underground Winery 2008 Late Harvest Zin) and went to town. It is one of the best brownies I have ever had--and it's so easy! It's also really lovely with vanilla ice cream on top (straight out of the oven of course) with a tad more of the wine drizzled on top. Nom nom!

What you need:
    -1 box of fudge brownie mix
    -slightly less than 2/3 cup of veggie oil (you want less oil than they ask for because of the alcohol base in the wine)
    -1/4 cup Late Harvest Zinfandel  (simply a 1-to-1 exchange for water)
    -2 eggs

Preheat oven to 350 degrees and then bake for 25-30 minutes in a greased 9 1/2 X 11 pan.

For more deliciousness, try drizzling some Late Harvest Zin on the top of the brownie batter once poured into pan.
